Beer is full of vitamins and minerals; one of the reasons our all-natural, unfiltered process is so important to us. It allows us to keep the maximum amount of these nutrients in our beer. So, next time you’re worried about a bit of sediment in your bottle, drink up – it’s good for you!

In the middle ages, monasteries were both a place of refuge, and to get safe food and drink. At this time, beer was safer to drink than water, as there was no filtration process for water. Monks were among some of the first organized brewers – beer was allowed to be drank during some fasts, and the monks would brew to feed the community as well. As time went on, brewing beer became a source of income for the monasteries, important, as the Order of Cistercians in France mandated that monasteries must be entirely self-supporting.
Today, Trappist beers brewed by these monasteries are hard to come by, and much sought after. There are 11 Trappist Breweries today – these breweries must brew the beer on-site, the monks need to be involved in the brewing process, and profits must benefit the community and the monastery. We’ll drink to that.
